Happy Friday & Giveaway Winner!

Guess where we’ve been today! :razz:

We enjoyed this fantastic Friday with a visit to the Vancouver Aquarium to make use of my membership one last time. Unfortunately I forgot to take pictures, so these are from last year. That’s the little guy seeing the belugas for the first time – he was so tiny then!

Maybe we’ll get to squeeze in another visit this month, before my card expires/we are moving to San Diego in a few weeks. I still can’t believe this is happening!

This little guy is so full of energy, he was walking and pushing his stroller for at least 1.5 km today. Not bad for an almost one and a half year old. ;)

We ended up walking almost the entire seawall, starting at the Vancouver Convention Center  with a stop at the belugas and sharks and then moved on all the way around Stanley Park to the Olympic Village!

18.1 km!

With the walk to and from our Skytrain station this makes a total of about 19.3 km. Plus, we walked around inside the Aquarium for about two hours… Needless to say I’m ready to pass out.

Fall Fun + What I Ate Wednesday

Hi friends, Happy [What I Ate] Wednesday!

Hope you had a great long weekend. We enjoyed some fall activities, including a fun trip to the Southlands Heritage Farm and Pumpkin Patch!

Fall is definitely here!

I’m in the middle of studying for my midterm /entertaining a teething 13-month old (he’s getting his first molars!), who also has a stuffy nose. As you can imagine, I don’t get too many chances to cook these days and I definitely don’t have the time to snap a picture of every meal in a day, but here are some highlights of the past week.

Breakfast and snacks:

hummus and veggies, coffee (with whipped cream), oven omelette with apple-pear sauce and whipped cream

Lunch:

fish sticks and roasted veggies

Dinner:

"Mexitalian" or "Mexiterranean"?

Heirloom Tomatoes, Bocconcini and Italian Salami as starter, Beef Chili as main course and I also whipped up a batch of Fall Harvest Vinaigrette (1 tsp Dijon mustard, 1 Tbsp. unsweetened apple juice, 2 Tbsp. Red Wine vinegar, 1 tsp maple syrup, 3 Tbsp. EVOO) to drizzle over greens.

A random confetti rice dish (risotto, maybe?) made of leftovers:

S for Summer

Hey everyone!

Technically (and if I look out the window) it’s still spring until the 20th of this month, but I always thought of June as already being part of the summer months.

Our weather is OK compared to last year (or maybe I didn’t realize it was nice, because I was either working or studying in the library…). Often sunny, mixed with clouds and the occasional rainy day here and there.

What I’m excited about this Summer:

  • Farmers Market on Saturdays. Here’s what Trout Lake looks like during the week:

  • Long walks and trying to take pictures of my feet while walking (yes, I do that sometimes, but it’s nearly impossible to coordinate!!!)That’s why I just take them while standing. :)

    Don't try to tell me you've never done that before! ;)

    I think we had our longest walk to date last weekend, when we walked about 25km!

  • Green Smoothies

    Standard: WF Green Goodness

  • Picnics

    Chicken Taco

I’m also looking forward to:

  • Relaxing at the beach or taking a dip in our closest outdoor pool
  • a trip to Europe (Sweden and Germany) to see friends and family!!!

Fun & random:
I sent a few diaper covers to Kath (of Kath Eats Real Food), who is expecting her first baby this summer. It was exciting that she mentioned me and showed them on her baby blog.
