What I Ate Wednesday (09/25/2013)

Posted on by Susan Posted in Eats | Leave a comment

This is going to be a quick one. Just stopping by to share some eats as of lately. Life has been a little crazy (sleep fighting toddler = stressed out mama!).

There has been lots of this:

Coffee, both the hot and cold variety.

And sandwiches:

I’ve been obsessed with sharp cheddar and avocado sandwiches lately.

Those two are definitely on repeat lately, but here’s what I’ve eaten today, so far:

  • Breakfast: Coffee, 1/4 German Apple Pancake
  • Lunch #1: Whole Foods pit stop – BBQ Chicken Pizza slice, shared with my son. Also: Pumpkin Spice Latte (with almond milk) for me, Mango Tango smoothie for the little monkey.
  • Lunch #2 (during naptime): small salad bar/hot bar box with arugula, cucumbers, mini bell pepper, tuna and some mac n cheese. Balsamic on top.
  • PM snack: coffee + Brown Cow strawberry yogurt (wayyyyy too sweet!) and I’m currently still hungry.
  • Dinner (in the making): Pasta Bolognese
What are your eats from the day? You can always find great inspiration over the “What I Ate Wednesday” linkup hosted by Jenn at Peas & Crayons.
I’m excited to open up today’s CSA box later in the evening. Our CSA (Community Shared Agriculture) farm is certified organic and we get a huge box full of local, seasonal and organic fruit and veggies delivered to the office every two weeks. Check back soon, if you want to see what we are getting on our box.

What I Ate Yesterday

Posted on by Susan Posted in Eats, Food | 2 Comments

Umm, so I had a true moment of mommy brain yesterday, when I thought I wouldn’t be able to participate in Jenn’s What I Ate Wednesday link-up. Luckily I realized it was only Tuesday and I still had time to write this post. Don’t blame me, I have a 23 month-old, who doesn’t like to nap anymore.

Lot’s of things have happened in the last few days, including getting a Costco membership, which is obviously reflected in my eats. I’m pretty excited about huge containers of organic lettuce and strawberries for cheap, but I also have to admit that I’m a victim of the 15-pack of Häagen-Dazs ice cream bars…

Alright, enough talk, let’s get straight to the food. Here are Tuesday’s eats:

Breakfast #1 (unpictured) – around 8:45am: Small bowl of Puffins with (organic) 1% milk + coffee

Breakfast #2 – 11am:  These amazing 3-ingredient Oat Crepes - seriously, this is the third time in a week I’ve made them – with homemade blueberry sauce

Lunch – 1pm: Whole wheat english muffin with Cambozola cheese, apple slices and spinach

+ blueberry smoothie

PM snack/treat (unpictured): Ice Cream from our Costco Stash + another coffee (BTW: I cut wayyyyy down on my caffeine intake and now brew 8 oz cups with the Keurig, so I usually don’t drink more than 16 oz a day)

Dinner: Everything but the kitchen sink veggie plate with hummus, sharp cheddar, toast and a fried egg.

It was a day full of easy meals with what we had in the fridge.

Peas and Crayons

Don’t forget to go and check out some more fun eats over at Peas & Crayons, there are always tons of amazing bloggers linking up!

Are you a Costco member? Do you overbuy? How do you prevent it? And do you have any new foodie finds lately? Please share, I’m always up for trying something new!

What I Ate Wednesday + Apple-Quinoa Mini Muffins {toddler-approved, wheat-free}

Posted on by Susan Posted in Eats, Recipes | Leave a comment

I’m joining the What I Ate Wednesday party again today, by linking up with Jenn from Peas & Crayons.

Peas and Crayons

But first I wanted to apologize that this little recipe didn’t get posted on Monday, as I promised on Twitter last week. Oops!

Apple-Quinoa Mini Muffins

It’s a wheat-free and toddler-approved snack, perfect for little hands to grab and munch on the go.

Ingredients:

  • 1 c cooked quinoa
  • 1 c oat flour
  • 1 t baking powder
  • dash of salt
  • 1/3 c brown sugar
  • 1 container apple sauce
  • 1 egg
  • 1 T vanilla extract
  • 1 t cinnamon
  • 1 small apple (pink lady), peeled and chopped into small pieces

Making them is so easy:

  1. Preheat oven to 375° F.
  2. Mix the oat flour, baking powder and salt together.
  3. In a separate bowl, mix the remaining ingredients, except for the quinoa and apple.
  4. Fold dry ingredients into wet mix and stir until well combined.
  5. Add cooked quinoa and apples and gently mix together.
  6. Pour batter into a greased (and lined , if you like) mini muffin dish and bake for about 20 minutes.

I forgot to take pictures with our camera, so all I’ve got for you is the above cell phone pic. #foodblogfail

But let me assure you, these puppies were devoured by my toddler!

In addition to keeping healthy snacks around, I have been trying to keep things quick and simple in the kitchen. Here are yesterday’s eats:

B: Oatmeal with banana, cherries and chocolate chippies :)

Snacks: yogurt + fresh organic strawberries, organic peach (both are on the dirty dozen list, so I try and buy organic when I can)

L: Tuna salad on an whole wheat English muffin, snap peas

Toddler snackage:

Snap peas, cucumber, hummus and blueberries, eaten on the patio.

Dinner:

Quick and easy southwestern quinoa salad (recipe coming soon).

Your turn: What were your eats from the day? Anything fun and healthy?

We just came back from the beach, so I’m off to wash the sand off my toes as long as the little guy is napping!

Happy Hump Day!
