What I Ate Wednesday (09/25/2013)

This is going to be a quick one. Just stopping by to share some eats as of lately. Life has been a little crazy (sleep fighting toddler = stressed out mama!).

There has been lots of this:

Coffee, both the hot and cold variety.

And sandwiches:

I’ve been obsessed with sharp cheddar and avocado sandwiches lately.

Those two are definitely on repeat lately, but here’s what I’ve eaten today, so far:

  • Breakfast: Coffee, 1/4 German Apple Pancake
  • Lunch #1: Whole Foods pit stop – BBQ Chicken Pizza slice, shared with my son. Also: Pumpkin Spice Latte (with almond milk) for me, Mango Tango smoothie for the little monkey.
  • Lunch #2 (during naptime): small salad bar/hot bar box with arugula, cucumbers, mini bell pepper, tuna and some mac n cheese. Balsamic on top.
  • PM snack: coffee + Brown Cow strawberry yogurt (wayyyyy too sweet!) and I’m currently still hungry.
  • Dinner (in the making): Pasta Bolognese

I’m excited to open up today’s CSA box later in the evening. Our CSA (Community Shared Agriculture) farm is certified organic and we get a huge box full of local, seasonal and organic fruit and veggies delivered to the office every two weeks. Summer Coffee Treat: Eiskaffee

We recently got a Keurig K-cup coffee maker and I’m a little obsessed trying out all the different types and flavors of coffee.

Side note: Did you notice I am spelling things the American way, now that we no longer live in Canada. Flavor definitely used to be flavour, but I’m trying to adapt, you know? ;)

I’m still struggling with the conversion to Fahrenheit though. And pounds, ounces (there are fluid ounces too, right?) and miles.

So, anyway, on one of those super hot days a couple of weeks ago, I just felt sipping on a nice, sweet iced coffee. I remembered that we also had vanilla ice cream in the freezer and I decided to treat the little guy to a small bowl and then it hit me:

Scoop of ice cream + coffee = yummm!

This worked really well with the Starbucks Caffe Verona Dark Roast K-cup, but regular (dark) brewed coffee, or even espresso would be perfectly fine as well. Just make sure to use enough ice cream, to have your coffee cool down enough.

This is actually what is called Eiskaffee in German (fyi: there is no such thing as iced coffee – coffee over ice cubes – in Germany, except Starbucks-like American coffee shops, but it’s not very popular, at least when I was growing up there) and you can get it at all Gelaterias and ice cream places.

So, if you’re feeling extra-scrumptious or you simply can’t decide whether to have coffee or ice cream, why not try both in a glass?

Latte to survive my morning class!

Actually, for the past few days, I’ve been trying to figure out what to do for Halloween and I’ve been searching the web for hours with costume ideas for a 13-month old. Wait, what? My little guy will actually be 14 months once Halloween rolls around!

I also found a ton of cute baby knitting patterns, but I should really stop at this point, because you are losing interest… So, let’s move on to the eats, which is probably really what you want to see. ;)

Some eats of the day

  • Breakfast: Blenz coffee almond milk latte + (unpictured) carrot-zucchini muffin,
  • Snack/Drink: Organic lemonade, apples and bananas with choco-hazelnut butter
  • Lunch: Gruyere and Bell Pepper sandwich and hickory sticks.
  • Dinner: Risotto with roasted brussels sprouts

I also had some pie from the Trout Lake Farmers Market!

Sour Cherry Pie & Vanilla Ice Cream

I am missing veggies big time lately, but with my courses and chasing my little guy around, I really don’t have the motivation to peel, chop, etc. Any inspiration to incorporate more greens into a busy schedule, please let me know? I’m thinking I definitely have to suck it up and pay for the convenience of chopped and washed greens again, now that the farmers market season is almost over.
