What? It’s Already Holiday Season?

Hi friends, how are ya?

Life is crayzay over here: Writing essays, chasing a toddler around, going on the hunt for food (I’m living on junk convenience food lately), battling a cold and the usual daily shenanigans.

I also still have this big guy to work something out with:

He was supposed to go as Jack’o'Lantern on Halloween, but never made it. ;)

Pumpkin Pie Brownie coming up on the horizon.

For now, I just have to work on my last essay before exam season starts and then I am DONE! Can you believe it? This girl is finally getting her degree!

In other news: It’s Thanksgiving in the US today and this means it’s only 1 month until Christmas! If you’re already getting into the Christmas Spirit, feel free to check out last year’s Christmas Food.

Vamp Up Your Grilled Cheese

Are you as obsessed with grilled cheese sandwiches as I am?

I’ve been having one at least every other day for the past two weeks. It’s not even funny. Our cheese budget needs to be revised.

There’s something comforting in that warm, melted cheese, sandwiched between to crispy (and buttery) slices of bread.

But I decided I need to keep things interesting, so here are some ideas to change up your usual grilled cheese routine:

Grilled Gruyere and Honeycrisp Apple

Another favourite of mine is Cambozola-Pear, which is really delicious on walnut bread. Sweet & salty!

You can also add greens:

Purple Kale Grilled Cheese

Spinach is also fantastic on grilled sandwiches.

You can also have a look at what’s in your fridge and create a Mixed Veggie Grilled Cheese like this one (sorry for the blurry cell phone pic):

But the apple and cheese combo is definitely one of my favourites!

Time Travels Part 2: Sweden

Hi friends! How are you?

I thought it’s only fitting to post my second recap of our summer vacation on the first day back to school. :) It really feels like it was such a long time ago, even though it’s just been a few weeks since we were there, so Time Travels seemed like a good title for our vacation recaps.

If you remember, the first part of our trip was to Germany, where we enjoyed good food, beer and the company of our lovely friends and family! After a few short days, we moved on to Sweden.

We had fun adventures in and around Stockholm! :D

We enjoyed the beautiful West Coast.

We also spent a day at Skansen, which is an outdoor museum/zoo in Stockholm.

Walking around Skansen made us hungry! Snack to the rescue: waffle topped with shrimp salad

Discovered some funky foods.

Fried Elk meat? Interesting…

And of course we enjoyed some Swedish food with the family:

Croustader filled with shrimp salad and roe, pork tenderloin with chanterelles and roasted veggies

Dessert:

Punschparfait and vino!!

I know I’ve said it many times before, but I simply cannot grasp how quick time flies!

I actually found chanterelles at Whole Foods yesterday and I’m looking forward to recreating the pork tenderloin dish. I’ll share the recipe with you if it turns out good!

But right now I’m remembering our little Europe trip with this post, while getting ready for my last two courses to finish my degree. It’s back to school for this mama!
