Happy Halloween!

Are you up to some trick-or-treating shenanigans?

This past week has been slightly crazy for me. Busy as usual and a whole bunch of fantastic things to share with you.

1. Blog Award

I want to thank Maria from Little Miss Cornucopia for giving my blog the Super Sweet Blogging Award last week! I feel so honoured that not only someone recognized my little blog, but that she also shared it with her own readers! Thanks, Maria!!!

2. Foodie Penpals

We’re off to the mall for some indoor trick-or-treating and Halloween fun, but I still wanted to share this past month’s Foodie Penpals treats with you.

My partner for October was Krista and she sent me a fantastic package:

  • Barkeley’s Chocolate Truffle bar

  • Chickpea snacks & Cheddar crispies

  • Italian spice mix & Chai tea (unpictured/hidden on the first photo)

Thank you, Krista, for the time to put together this lovely package! The chocolate bar didn’t last very long and the cheddar crispies were devoured by me and my 14-month old!

3. What I Ate Wednesday

Ok, so time clearly is not a friend of mine lately, so I just did not manage to snap pics of a whole day’s worth of eats, so this week will be WIAW “Lunch Edition”, featuring some of my lunches of the past week.

Grilled Cheese (completely unexpected, right.. :) ) and greens:

If you’re looking for ways to make your grilled cheese sandwich more interesting, you can check out *this post* .

Amy’s cheese burrito, apple/my 14-month old son’s lunch/more grilled cheese, apple, hardboiled egg:

Squash gnocchi and crispy sage butter with parmesan on winter greens (kale, collards, chard):

This was probably my favourite lunch of the week so far. :)

We’re off for some trick-or-treating and candy-collecting!

Do you have anything fun planned for today?

Happy Halloween!

Cute Finds + What I Ate Wednesday

Posted on by Susan Posted in Eats | 2 Comments

Hi all!

How are you? Hope you are enjoying a fabulous fall so far with hot drinks and sweet treats!

I sure am!

Latte to survive my morning class!

Actually, for the past few days, I’ve been trying to figure out what to do for Halloween and I’ve been searching the web for hours with costume ideas for a 13-month old. Wait, what? My little guy will actually be 14 months once Halloween rolls around!

For some reason I found a whole bunch of really cute non-Halloween related things on Etsy.

For greeting cards:

Custom Return Address Stamp - great for save the dates and invitations, diy save the dates, diy invites - 3/4" x 2 3/8"

Address stamp (from You're That Girl Designs via Etsy)

For baby-wearing mamas:

Maternity. Maternity Coat. Babywearing Jacket. Maternity Jacket. Babywearing Coat. SHIPS today. Baby Wearing Coat. CANADA.

Handmade Babywearing Coat (LoVDdesign via Etsy)

For little seafarers:

Organic Cotton Onesie - Screen Printed American Apparel Baby Onesie - Vintage Ship Illustration- Eco Friendly - Nautical (You pick size)

Organic Cotton Nautic Baby Onesie (Oh, Little Rabbit via Etsy)

For your wall:

Today Was Fun: Kid's Wall Art - Dr. Suess

Wall Poster (emgdesign via Etsy)

I also found a ton of cute baby knitting patterns, but I should really stop at this point, because you are losing interest… So, let’s move on to the eats, which is probably really what you want to see. ;)

Some eats of the day

  • Breakfast: Blenz coffee almond milk latte + (unpictured) carrot-zucchini muffin,
  • Snack/Drink: Organic lemonade, apples and bananas with choco-hazelnut butter
  • Lunch: Gruyere and Bell Pepper sandwich and hickory sticks.
  • Dinner: Risotto with roasted brussels sprouts

I also had some pie from the Trout Lake Farmers Market!

Sour Cherry Pie & Vanilla Ice Cream

I am missing veggies big time lately, but with my courses and chasing my little guy around, I really don’t have the motivation to peel, chop, etc. Any inspiration to incorporate more greens into a busy schedule, please let me know? I’m thinking I definitely have to suck it up and pay for the convenience of chopped and washed greens again, now that the farmers market season is almost over.

Happy (What I Ate) Wednesday!

Fall Fun + What I Ate Wednesday

Posted on by Susan Posted in Eats | 9 Comments

Hi friends, Happy [What I Ate] Wednesday!

Hope you had a great long weekend. We enjoyed some fall activities, including a fun trip to the Southlands Heritage Farm and Pumpkin Patch!

Fall is definitely here!

I’m in the middle of studying for my midterm /entertaining a teething 13-month old (he’s getting his first molars!), who also has a stuffy nose. As you can imagine, I don’t get too many chances to cook these days and I definitely don’t have the time to snap a picture of every meal in a day, but here are some highlights of the past week.

Breakfast and snacks:

hummus and veggies, coffee (with whipped cream), oven omelette with apple-pear sauce and whipped cream

Lunch:

fish sticks and roasted veggies

Dinner:

"Mexitalian" or "Mexiterranean"?

Heirloom Tomatoes, Bocconcini and Italian Salami as starter, Beef Chili as main course and I also whipped up a batch of Fall Harvest Vinaigrette (1 tsp Dijon mustard, 1 Tbsp. unsweetened apple juice, 2 Tbsp. Red Wine vinegar, 1 tsp maple syrup, 3 Tbsp. EVOO) to drizzle over greens.

A random confetti rice dish (risotto, maybe?) made of leftovers:

My son loved it!

Another Dinner/Leftover Lunch:

Roasted Veggie and Butternut Squash Lasagna
