Munchkin Meals & What I Ate Wednesday

Happy Hump Day!!

It’s been a while since I shared some of the little dude’s meals, so today I thought I’d show you what my 17 month-old can eat in a day. Along with my eats. :)

I’m linking up with Jenn at Peas and Crayons for another What I Ate Wednesday. This month’s challenge is to vegify our meals and to share our favourite ways to cook and eat veggies. Two words: Green Smoothies!!!

Last Friday’s eats, starting with breakfast for two:

Plain bagel with butter, gruyere cheese, scrambled egg and apple for me and the little dude and small green juice.

Lunch was quick:

Falafel salad (made with frozen falafels, spinach, cukumber, homemade hummus and balsamic glaze) and huge green smoothie – or shoud I say Nutriblast? ;) –  for an early PM snack. Both shared with my son.

Toddler Snackin’:

Organic blueberries and strawberries, cheddar-apple mini muffin (I’m on a mini muffin baking kick lately) and iogo toddler yogurt.

Afternoon Tea:

Echinacea, to fight a cold.

And finally dinner for all:

Homemade Pizza! Well, semi-homemade. :) Whole Foods pizza dough, topped with tomato sauce, cheese and Genoa Salami. Side of berries for the little man, side of ceasar salad (unpictured) for the grown-ups.

I’m sure there were a few more snacks here and there, but these are the photos I took, and my mommy-brained memory can’t pinpoint to any other specific eats from that day.

Day Old Coffee and more Slow Cookin’ {WIAW}

Hey Friends, how are you!

We’re actually just about to leave for a little lunch/play date with friends, but I still wanted to share my eats for this week’s What I Ate Wednesday.

Peas and CrayonsThis time I decided to post Tuesday’s eats, because I have no idea what today’s eats are going to be as of now.

What I Ate Yesterday:

Breakfast began with a mug of day-old coffee, because I’m lazy we  were in a rush to get to swim class. It also included yogurt, organic raspberries and half a banana, topped with my very last of the delicious granola I got in my last Foodie Penpals package.

Little Man’s breakfast was similar:

I had to pour out the coffee for obvious reasons, but it was worth a try. :)

Snacks/Lunch: Starbucks to the rescue (tall blonde roast coffee misto – no syrup!). Also: A whole-wheat pancake with homemade applesauce+ cinnamon, banana-almond butter roll-up and a green smoothie, thanks to my new Nutribullet.

Swim classes are kind of during lunch time, so by the time we’re back home it’s already early afternoon. I ended up snacking on the above (and skipping lunch), but the little guy had a cheeseburger plus some of my snacks – my son loves his green smoothies!

Dinner: This dish (below) needs a name. Vegetable and Beer Chicken Stew, maybe? Carrots, yam, entire onion and whole garlic cloves layered in the slow cooker, seasoned chicken breasts on top. Add half a can of beer plus enough water to cover the veggies completely. Cook on high for 3.5 -4.5 hours. Remove onion and garlic, and stir in the beans. My chicken wasn’t submerged, so it ended up a little dry when it was done (which I actually like - I really can’t stand the taste of chicken skin/fat and I’m not a fan of peeling meat of the bone). Luckily my family doesn’t care what’s on the table so my guys are just fine with dry meat, haha!

Served with sauteed kale and rice – super filling!

The Return of the Green Smoothie

Oh, hi – I’m back!!

There have been so many things going on, but at the same time nothing really happened, and for some reason I just ended up not having a single minute to blog or take pictures.

So what exactly have we been up to?

Just hanging out at home over the holidays, a few dinners out, a little bit of cooking at home, eating lots of cookies and drinking a couple of glasses of mulled wine. That’s it. Oh, we also enjoyed the one day of snow that Vancouver got this winter season:

Be kind and blame the terrible photo quality on my phone – we don’t really look like zombies (although I do sometimes…).

I think the fact that all three of us were at home made a huge difference to my day, because I felt like I just had two babies to take care of.  One of them is in his thirties… ;-)

No, really, I’m exhausted. For the past couple of weeks (umm, or should I say 16 months?) I did the mom thing without even the slightest break – or so it feels. Guess who’s the first one up when the little guy wakes up? If you guessed me, you’re right. Add a few night wakings in to the mix, along with the late nights of the holidays and I am one tired mama. Can someone please watch my kid so I can sleep? Just kidding (not really…).

Anyway, it’s 2013 and with a new year comes new motivation. I’m excited to use my Christmas gift, the Nutribullet, on a frequent basis. Hooray for green smoothies!!!

Without further ado, here are yesterday’s eats:


Focus on the giant green smoothie (or should I say Nutriblast, haha!) + half a bagel with gruyere cheese and a scrambled egg + coffee


Yam and Avocado Roll


Easy slow cooker veggie curry – recipe will be up on Friday. :)

I also snacked on a hard-boiled egg during the day and had a Banana-Almond Butter-Cocoa Smoothie for dessert in the evening.

As you can tell, I’m loving my new blender and I’m so excited to be finally making more smoothies again. It’s so much easier and better than using a hand blender.

OK, for some strange reason the end of my post just disappeared after I was previewing it in a new tab and I can’t find it in the revision history, so I’m debating whehter I’ve actually written it or not. Yes, I admit that I’m overtired technically challenged.

I remember it involved me asking you about your New Years goals. Do you have any? Do you make resolutions? Do you stick with them? I’m usually just setting a bunch of goals, no pressure. I believe you can make changes at any point in time, so the whole resolution thing doesn’t really put more pressure on me than usual, but leave a comment with your experience/goals/changes!

I’m calling it a night and I will see you soon with the curry recipe from above!
