Sugar-Free Day 1-3

Happy Friday!

If you read my last post, you know that I’m cutting out all added refined white sugar for 1 whole week. I see it as my personal little sugar detox.

I still eat sugar in the form of fresh and dried fruits, and I’m not ditching carbs altogether. I just need to refocus from highly processed and sweetened to more fresh whole foods and meals cooked from scratch.  We have a mini road trip planned for Sunday, and I will pack us snacks for the car, but hopefully I won’t be too tempted to go crazy.

Here are some of my eats from days 1 – 3 without refined and added sugar.

Day 1: 

  • Breakfast: Eggs, toast, fruit, coffee. My bread is Trader Joe’s sprouted grain bread and it’s sweetened with dates and raisins – win for me!
  • Lunch: Cedarlane frozen (well, I heated it up, obviously) bean and cheddar burrito.
  • Snack: Organic Hummus (Costco find), bell peppers, Cambozola cheese and crackers (I found out they had sugar in them, so I stopped after 2), Green Smoothie
  • Dinner: We went on a little drive around town to Old Navy, to pick up a plain toddler shirt for a little project I’m working on, and it was to late to start cooking, so we went to Islands Burgers and I rolled with the grilled Mahi Mahi tacos.

Day 2: Breakfast was toast with cream cheese and banana with coffee, Lunch: Chicken Tikka Masala at UTC mall shared with the little guy, iced Starbucks Latte, Dinner: Spinach,  bell peppers, tomato, pasta, mushrooms and parmesan. Call it a warm pasta salad if you want. :)

Day 3: Breakfast: Banana (I slept in this morning) and coffee, Snack: smoothie, Lunch: turkey, cheese + tomato sandwich and hummus with pita from the farmers market. PM snack and Dinner are still unknowns as of now. :)

What has helped a lot is the fact that I actually spend some time to prepare chopped veggies and fruit ahead of time.

Cheat/Treat: I may or may not have eaten a couple of squares of chocolate. I don’t see this as a fail or disappointment, since it’s sweetened with organic cane sugar. Not ideal, but I couldn’t resist and at least didn’t eat the whole bar at once. I even have some left! :D

Well, I’m off to dream of ice cream entertain my toddler!

What I Ate Yesterday

Umm, so I had a true moment of mommy brain yesterday, when I thought I wouldn’t be able to participate in Jenn’s What I Ate Wednesday link-up. Luckily I realized it was only Tuesday and I still had time to write this post. Don’t blame me, I have a 23 month-old, who doesn’t like to nap anymore.

Lot’s of things have happened in the last few days, including getting a Costco membership, which is obviously reflected in my eats. I’m pretty excited about huge containers of organic lettuce and strawberries for cheap, but I also have to admit that I’m a victim of the 15-pack of Häagen-Dazs ice cream bars…

Alright, enough talk, let’s get straight to the food. Here are Tuesday’s eats:

Breakfast #1 (unpictured) – around 8:45am: Small bowl of Puffins with (organic) 1% milk + coffee

Breakfast #2 – 11am:  These amazing 3-ingredient Oat Crepes - seriously, this is the third time in a week I’ve made them – with homemade blueberry sauce

Lunch – 1pm: Whole wheat english muffin with Cambozola cheese, apple slices and spinach

+ blueberry smoothie

PM snack/treat (unpictured): Ice Cream from our Costco Stash + another coffee (BTW: I cut wayyyyy down on my caffeine intake and now brew 8 oz cups with the Keurig, so I usually don’t drink more than 16 oz a day)

Dinner: Everything but the kitchen sink veggie plate with hummus, sharp cheddar, toast and a fried egg.

It was a day full of easy meals with what we had in the fridge.

What I Ate Wednesday + Apple-Quinoa Mini Muffins {toddler-approved, wheat-free}

I’m joining the What I Ate Wednesday party again today, by linking up with Jenn from Peas & Crayons.

But first I wanted to apologize that this little recipe didn’t get posted on Monday, as I promised on Twitter last week. Oops!

Apple-Quinoa Mini Muffins

It’s a wheat-free and toddler-approved snack, perfect for little hands to grab and munch on the go.


  • 1 c cooked quinoa
  • 1 c oat flour
  • 1 t baking powder
  • dash of salt
  • 1/3 c brown sugar
  • 1 container apple sauce
  • 1 egg
  • 1 T vanilla extract
  • 1 t cinnamon
  • 1 small apple (pink lady), peeled and chopped into small pieces

Making them is so easy:

  1. Preheat oven to 375° F.
  2. Mix the oat flour, baking powder and salt together.
  3. In a separate bowl, mix the remaining ingredients, except for the quinoa and apple.
  4. Fold dry ingredients into wet mix and stir until well combined.
  5. Add cooked quinoa and apples and gently mix together.
  6. Pour batter into a greased (and lined , if you like) mini muffin dish and bake for about 20 minutes.

But let me assure you, these puppies were devoured by my toddler!

In addition to keeping healthy snacks around, I have been trying to keep things quick and simple in the kitchen. Here are yesterday’s eats:

B: Oatmeal with banana, cherries and chocolate chippies :)

Snacks: yogurt + fresh organic strawberries, organic peach (both are on the dirty dozen list, so I try and buy organic when I can)

L: Tuna salad on an whole wheat English muffin, snap peas

Toddler snackage:

Snap peas, cucumber, hummus and blueberries, eaten on the patio.
