Fluffy Pancakes and Green Challenge

After hearing about using vinegar to fluff up pancakes (first from a friend and then finding a recipe on Pinterest), I decided to give them a try. The original recipe comes from Coleen’s Recipes and I followed it to a T.

The result:

Super fluffy pancakes!

I realized I had no syrup in the house, so I decided to eat mine with lemon-vanilla cottage cheese creme (about 1/4 cup whipped creme, 1/2 cup cottage cheese, juice of 1/2 lemon, 2 teaspoons of vanilla sugar all blended together until creamy) and fresh strawberries.

Yummy and toddler approved! :)

Green smoothie with a handful spinach, 1/4 cucumber, 1 pear, lemon juice and fresh ginger (sorry for the phone pic taken in my dark, messy kitchen…).

I’ve come to the conclusion that I like my green smoothies not too sweet. I’m no longer adding frozen banana or sweet fruits to them. I still love all kinds of fruit but not in my green smoothie. This girl needs ginger + lemon!

Do you drink green smoothies? It’s an easy way to get some greens into your diet.

Whole Wheat Crepes

For our brunch yesterday, we ended up having something we haven’t had in a long time: Crepes. We each had our own version.

For Mr. Hungry:

For the batter, I whisked together 1/2 cup whole wheat flour, 2 eggs, 1/2 cup of milk, then scooped a small amount into a hot pan, and spread it out evenly. The result was a thin whole wheat crepe:

His crepe fillings: ham, cheese and unpictured mushrooms:

Her crepe fillings: chopped green bell pepper, mushrooms, tomatoes and unpictured spinach:

Perfect for an undecisive Saturday morning! :-)

We are currently working on the blueprints for our Gingerbread Mansion – I am looking forward to sharing the results with you!

Farmers Market Food Frenzy

On Saturday I forced my guy to go and do something very unmanly with me: Grocery shopping! I took him to the farmers market, and it was a beautiful day. We started by lining up for a savoury buckwheat crepe, which was deeeelicious. The boyfriend said that he prefers the plain white ones with just ham and cheese, but I loved mine: La Chevre – bechamel sauce, goat cheese, greens, roasted red peppers, and vinaigrette. Yum!

We then did some running back and forth, in order to decide what we really need want to buy, and one of his first sentences was: “We HAVE to get some of those funny looking tomatoes!” I then told him – the foodie teacher that I am, hehe – that those were heirloom tomatoes – and, boys and girls, let me tell you that they were gorgeous! We ended up with about 3 pounds of tomatoes and have been eating them for the past three days, even though it hurts a little bit, because they are just so pretty! ;-)

Here is a little rundown on our purchases:

… ginormous corn

A Lemon Cucumber – new to me…

.. as well as Georgian Fire Garlic – I’m especially looking forward to this one!!!

The Heirlooms tasted super delicious on a  slice of Whistler beer bread (I forgot what it was called, but it was bready glory!) from Pure Bread, with some basil and gruyere cheese!!! 

Ok, now I have to think what to make of this abundance of food! Any tips and ideas? I have to get ready for work, so I’ll catch ya later!
