I recently bought a vegan zucchini chocolate chip bread at the cafeteria and surprisingly found it so yummy, I decided to make my own. However, after being only partially satisfied by the recipes I found on the web, I decided to make one up.
- 1.5 cups flour
- 1 tsp baking powder
- dash of salt
- 1 tsp ground cinnamon
- 0.5 tsp ground cardamom
- 2 tbsp vegetable oil
- 1 cup sugar
- 1/2 smashed banana
- 1 tsp vanilla extract
- 2 tbsp almond milk
- 1/2 cup grated zuchini
- 1/2 cup vegan chocolate chpis
If you want to do it Susonia style, do as follows:
First, mix the dry ingredients. Then mash the banana, add the oil and sugar and beat well ( I don’t have an electrical mixer, so my right arm ended up, getting quite the workout…). Add almond milk and vanilla extract, and beat some more. Now, mix the dry ingredients with sugar-oil-banana-mixture. Last, add the grated zucchini and chocolate chips. Bake at 350F for about an hour, or until a toothpick inserted in the middle comes out without dough.
I was wondering how to make it rise, as I wasn’t planning on adding eggs. Some recipes call for applesauce, or smashed banana, or ground flaxseeds with water, or egg replacer, but I had neither of them at home. I went with banana (but I might add chia seeds the next time). My version didn’t rise very well, I guess I should have added baking soda as well (didn’t have it, though). However, it turned out deliciously chocolatey & moist (I guess it’s the zucchini).
If you have read my about page, you know, that I’m definitely not a baker. I’m just having fun, getting surprised from my oven, if one of my creations tastes good. I like cooking a lot better. But maybe it’s just a matter of practice, and who knows, maybe you soon will see some more Susonian baked goodness…
